Yummy Rum Cake

I love rum and I love cake, it took me a while but I discovered rum cake is yummy. I've discovered and modified a great recipe. It takes a little bit of work, but its always worth it.



Making the cake;

Ingredients
1 - box yellow cake mix (super moist is preferred)
1 3.5 oz box of vanilla instant pudding mix (not required if using super moist cake mix)
1/2 cup of milk
4 eggs
1/2 cup Appleton Estates rum (or whatever rum you like, I avoid flavored rums)
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup finely chopped walnuts (I skip these b/c I don't like walnuts)

Preheat oven to 325 degrees

 Spay bundt pan with non stick spay, and if you are using the walnuts sprinkle them on the bottom.

Add cake mix, (pudding if needed) milk, eggs, rum, oil, and vanilla in a large bowl and mix until very smooth. Pour the mixture into the bundt pan.

Bake for 55 minutes or until a toothpick comes out clean.

While the cake is cooling you will want to prepare the glaze.

Ingredients
1/2 cup of butter
1/4 cup of water
1 cup granulated sugar
1/2 cup Appleton Estates rum

Mix butter, water, and sugar in a small sauce pan. Bring to a boil then reduce to a simmer, stir until sugar is dissolved. Add the rum and mix.

Pour the glaze slowly over the cake, it will take a while to absorb so be patient.

Once that is done and settled, remove the cake from pan. It will be very easy to destroy this cake so try not to move it too much.

This cake always tastes better the next day.
